Q: Where do you source your vegetables and are they certified organic?

A: We have been growing a lot of our produce through the years for our ferments and have been doing so using “beyond organic” growing methods. We were certified organic for a brief period around 2008-09, but decided it was cost and time prohibitive to continue certification. In recent years we have been purchasing more of our produce from certified organic growers in our region as well as from produce supplier Co-op Partners Warehouse in St. Paul, MN.

Q: Are your ferments lactofermented and does that mean that there is dairy in your ferments?

A: The prefix “lacto” in “lactofermentation” is derived from Latin meaning milk. However, lactofermentation, having evolved from the souring or fermenting of milk, includes the fermentation of various organic substances including vegetables.
